Nose
The reduction and the initial impression on the nose are a little wild but relax with oxidation. The aromas, in a "Southern" style, are expressed in notes of fruit liquor such as cherry, redcurrant, blackberry and lightly spiced with liquorice
Mouth
Rather fluid, but at the same time quite dense, with herbal and mineral hints that give it a fresh and dynamic aspect. The tannins are blended, powerful, sappy, fleshy and greedy but also retain a crisp structure
Winemaking
The aging takes place for 18 months in a single oak vat of 6,000 litres where fermentation also takes place .
