This classic and traditional wine in the region of Oristano is produced from Vernaccia. Thanks to this winemaking technique, it resembles the yellow wines of the Jura. The late harvest takes place in October. The wine is vinified in a traditional way before being transferred the following March into partially filled casks or barrels. This "sub-sail" technique allows controlled refining and oxidation of the wine. After a long process of a few years, the wine is bottled.
