Amarone is produced from grapes traditionally dried on straw mats for about four months away from the wind and rain. Meanwhile, the water evaporates in the berry and only natural substances of grapes remains with a high concentration. After pressing and fermentation, the wine is aged for two years in oak casks and one year in bottle to reach its uncontested typicity.

 

The vintage Ca’ Coato is produced in the town of Negrar on three hectares between 170 and 220 metres above sea level with a splendid south west exposure.

Color : Intense ruby red with garnet reflections


Nose : Cherries and prunes, mineral notes.


Mouth : Smooth initial attack, assertive tannins supported by a good fresh structure. Pleasant finish.


Alcohol level : 17.5%


Winemaking : The ageing lasts 2 years in barrels and casks of oak, cherry wood and chestnut, followed by 12 months in bottle.


Food pairing : Venison with wild mushrooms, duck breast with prunes, quail stuffed with foie gras, oriental dishes, full bodied cheeses.
